I first started out. Working in the restaurant ..or as some call it ''Food Industry';
I was in a turning point in my life. Painful but much needed inner growth. My first
job was working in a bakery. Making cookies...cakes..some pastries and bread.
Knew how to make these pretty much from childhood. Watching my grandmothers
bake and cook. Some recipes they had on them were from friends,,travels or rip offs
from past mother in laws. One work day coming in early in the morning. Was given this recipe in scribbled out index card..,,told to make a single batch for a client coming in. Nervous. Heard making cheese cake is a pain and can crack. From my memory I didnt remember making cheese cake before. So off I went to get the ingredients. Rolled up my culinary school jacket sleeves.. Slightly stained by previous melted butter.
Cheese Cake Bars
8 ounce cream cheese
1 large egg
3 Tablesppon orange juice
1/2 teaspoon vanilla
1/3 cup soft butter
1/3 cup brown sugar
1/4 cup granulated sugar
1 cup all purpose flour.
* In small bowl cream the cream cheese and rest of ingredients. Set aside.
Make crust. Other bowl blend in ingredients will be crumbly. Save 1/4 cup
for topping. Press rest in 8 inch pan. Bake 12 minutes. Let cool. Pour in filling.
Make level in pan. Sprinkle topping over batter. Can swirl in 1/2 cup melted
favorite jam in batter, Will be called ''Swirled cheese cake bars" Bake 25 minutes.
Will be soft set. Cool. Chill in freg.
